The Chef is deeply attached to his land and to the extraordinary palette of products and flavors that it offers throughout the seasons. And his cuisine reflects this deep and sincere connection with Provence by offering recipes that highlight this unique land.
Dylan Morales's cooking is in tune with nature and fresh seasonal products. Sun-drenched fruits, various vegetables from the garden, aromatic plants from the garden - the Chef is particularly fond of lemon thyme - make up exquisite dishes with the catch of the day from the Mediterranean or the beautiful piece of meat. The restaurant La Bastide du Clos des Roses welcomes you in a beautiful Provencal country house entirely renovated in the middle of the vineyards near Fréjus. In the dining room, the rough stones blend perfectly with the warm colors of burgundy and violet and the wooden elements that recall the spirit of wine. Subtle harmony with the contemporary furniture and designer lighting, agreement between tradition and modernity with the contemporary works created especially for the bastide.
